- Saponification is the base-catalyzed hydrolysis of esters (aka the hydrolysis of fats and glycerides).
- This is in contrast to acid-catalyzed hydrolysis of esters (See Ethers, Epoxides and Esters). Base-catalyzed hydrolysis of esters is irreversible:
